3 large baking Potatoes, sliced into matchsticks 1/4 inch thick

Preparation
Preheat oven to 450⁰F.
In a large bowl, toss potatoes with the oil, 1/2 teaspoon salt and additional spices (optional).
Grease a baking sheet with cooking spray or extra oil. Spread potatoes in a single layer.
Bake until golden brown and crisp, about 35 minutes.
Serve hot with your favorite condiments.
Additional spice ideas:
Cajun: 1 1/2 teaspoons garlic powder, 1 1/2 teaspoons smoked paprika, 1 1/2 teaspoons oregano, 1 teaspoon thyme and 1/4 teaspoon cayenne pepper
Garlic: 1 1/2 teaspoons garlic powder
Herbs and Cheese: 1 1/2 teaspoons of your favorite dried herbs and 1/4 cup parmesan cheese
Sweet: 1 teaspoon cinnamon and 1 1/2 teaspoons sugar
