Parsnip Puree

Pureed parsnips are a healthy substitution for mashed potatoes and have a nutty, lightly sweet flavor. Recipe source:  Love & Lemons

  • 1 teaspoon Garlic Powder
  • 2 tablespoons Cooking Oil
  • 1.5 teaspoons Lemon Juice
  • 1/2 teaspoon Salt
  • Pinch of Pepper
  • 1/4 teaspoon dried Herbs (like Rosemary, Thym, or Oregano)
  • 5 medium Parsnips, peeled and diced
  • 1 medium Cauliflower, cut in small pieces
Preparation
  1. Bring a large pot of salted water to boil. Add parsnips and cauliflower and boil for 10-12 minutes or until soft. Drain and transfer to a blender.
  2. Add garlic powder, oil, lemon juice, salt and pepper to the blender. Blend until smooth. If necessary, add a small amount of water to help blend.
  3. Stir in dried herbs. Season to taste with salt and pepper and serve.
