3 cups Water
1 tablespoon Olive Oil
2 tablespoons Curry Powder
1 (15 ounce) can Tomato Sauce
Salt, to taste
1 cup cry Brown Lentils
2 cloves Garlic, minced

1/2 bunch Cilantro, minced (optional)

Bring water to a boil in a sauce pot, then add the lentils. Allow the pot to come back up to a boil, turn the heat to low, and place a lid on top. Simmer for 20 minutes. Drain.
Heat olive oil in a large skillet over medium heat. Add the garlic, onion and carrots and sauté for about 5 minutes. Add the curry powder and sauté for 1 minute more.
Add the lentils and tomato sauce to the skillet. Stir and heat for about 5 minutes. Turn heat off and salt to taste. Top with fresh cilantro and serve with rice if desired.
